SWEET POTATO SOUFFLE 
3 med. sweet potatoes
2 eggs
1/2 c. sugar
1/2 c. coconut
Marshmallows

Peel potatoes and boil until tender. Drain water off and mash potatoes. Then use mixer and beat adding egg yolks, sugar. Mix coconut in. Put in 2-quart casserole dish. Cover potatoes with marshmallows. Beat egg whites for meringue. Put on top of marshmallows and bake in 350 degree oven until meringue is brown.
