RICE AND BEEF CASSEROLE 
2 c. uncooked rice
1 tsp. salt
1 lb. lean beef stew, ground
2 cans beef consomme
1 stick butter
1 med. onions, chopped

Melt butter in heavy skillet and lightly brown onions and beef. Put rice in 1 1/2 quart baking dish. Add salt and pour beef consomme over rice. Add meat mixture over top of rice. Cover with foil and bake at 350 degrees for 1 hour. Serves 6.
