GREAT PUMPKIN COOKIE 
2 1/4 c. flour
1 1/4 c. oatmeal
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. butter, softened
1 c. packed brown sugar
1 c. granulated sugar
1 egg, beaten
1 tsp. vanilla
1 c. canned pumpkin
1 (12 oz.) pkg. chocolate chips

Combine all dry ingredients in a medium bowl. In a large bowl, beat sugars and butter until fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin. Mix well after each addition. Stir in chocolate chips. Bake 15-20 minutes or until cookies are firm and lightly browned. Frost with icing when cool.
