SQUASH CASSEROLE | |
1 lb. yellow squash 1 lg. onion 1 can cream of mushroom soup 3 boiled eggs, chopped 1/2 c. butter 16 saltine crackers 2 c. grated Cheddar cheese Salt and pepper to taste Cut up the squash and onion. Boil until tender. Drain and mash. Add the salt, pepper, eggs, soup, butter and 8 crackers that have been crushed. Mix well. Layer half of the squash mixture in a dish. Sprinkle this with 1 cup of the cheese. Spread the remaining squash on top of the cheese and sprinkle the remaining 8 crushed crackers on the squash. Sprinkle the remaining cheese on top of the crackers. Bake at 350 degrees for 45 minutes. Serves 4-6. |
