LEMON PARMESAN CHICKEN 
1/4 c. bread crumbs
3 tbsp. grated Parmesan cheese
1 tbsp. parsley flakes, or 3 tbsp. fresh parsley, cleaned, chopped
3 chicken breasts, split, skinned, halved, washed and patted dry (about 1 1/2 lbs.)
1/2 c. butter, melted
1 tbsp. lemon juice

Preheat oven to 350 degrees. Combine bread crumbs, cheese and parsley in medium bowl. Dip chicken in crumb mixture. Coat both sides and place in eight-inch shallow baking dish. Melt butter in small saucepan over low heat. Stir in lemon juice. Drizzle over chicken. Bake uncovered for one hour. Serves 4 to 6.
