LEMON PARMESAN CHICKEN 
1/4 c. fine dry bread crumbs
3 tbsp. grated Parmesan cheese
1 tbsp. parsley flakes
3 chicken breasts (about 1 1/2 lbs.)
1/2 c. butter, melted (I use only 1/4 c.)
1 tbsp. lemon juice

Split, skin, halve, wash, and pat dry.

Combine crumbs, cheese, and parsley. Dip chicken in crumb mixture. Coat both sides and place in shallow baking dish.

Melt butter, stir in lemon juice, and drizzle over chicken. Bake uncovered 1 hour in preheated 350 degree oven. Serves 4-6.
