CAJUN BREAD PUDDING 
1 loaf stale sliced bread
1 1/2 c. flaked coconut
1 1/2 c. raisins
1/2 lg. bottle butter-flavored vanilla
1 can evaporated milk
1 c. condensed sweet milk
1/2 tsp. baking powder
2 sticks butter
2 3/4 c. sugar
5 beaten eggs
1 c. water
10 egg whites

In large bowl, mix 2 cups sugar and 5 beaten eggs and butter-flavored vanilla. Then add evaporated milk, water and sweetened condensed milk. Set aside.

In a deep bowl you can bake in, place a layer of bread, broken up. Sprinkle with half the raisins and half the coconut. Dot with 1 stick of butter. Put a second layer of bread.

Repeat first layer but not quite as thick. Pour liquid mixture until it is slightly covered. Use milk, if you need more liquid. Bake in oven again for 1 hour. Do not cook dry.

MERINGUE: Beat 10 egg whites in a bowl. When stiffening begins, add baking powder and beat until stiff. Add 3/4 cup sugar and beat until sugar melts. Place on pudding and return it to oven until it is brown.
