SPINACH CASSEROLE 
2 pkg. frozen chopped spinach, cooked & drained
1 c. white sauce
2 beaten eggs
1 tsp. minced onions
1/2 pkg. (6 oz.) jalapeno pepper cheese

Melt cheese in white sauce and combine all ingredients. Put in a 2 quart casserole and bake at 350 degrees for 30 minutes. If you prefer "very hot" casserole, the whole 6 ounces of jalapeno pepper cheese can be added.

For the White Sauce: Melt 2 tablespoons butter in saucepan over low heat. Blend in 2 tablespoons flour and 1/4 teaspoon salt. Add 1 cup milk all at once. Cook, stirring constantly until mixture thickens.
