JALAPENO CORN BREAD CASSEROLE 
1 c. yellow meal
1 c. milk
2 eggs, beaten
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. oil or bacon drippings
1 c. (1 lb. 1 oz.) cream style corn
1 lb. yellow jalapenos (green chilies may also be used)
1 onion, chopped
1 1/2 lbs. ground chuck

Combine meal, milk, eggs, salt, soda, oil and corn and mix well. Brown meat, drain on paper towel. Pour half batter into greased skillet (use your iron skillet) dusted with meal. Add meat and top with remaining batter. Bake at 350 degrees for about 50 minutes. Serve immediately after cooking. Yield: 6 servings.
