JALAPENO CORN CASSEROLE 
1 c. rice
1 med. chopped bell pepper
1 med. chopped onion
1 c. chopped celery
1/2 c. butter
1 tbsp. sugar
1-2 lg. jalapeno peppers, chopped
2 c. cream style corn
2 c. whole kernel corn
1 c. shredded cheddar cheese

Cook rice; set aside. Saute onions, bell pepper and celery until tender. Combine rice and vegetables and next 4 ingredients. Mix well. Spoon mixture into lightly greased baking dish. Bake at 350 degrees for 40 to 45 minutes. Garnish with pepper ring, etc.
