SPINACH SALAD 
1 pkg. fresh spinach
1 c. sour cream
1/4 c. sugar
2 tbsp. vinegar
1 tbsp. horseradish
1/2 tsp. dry mustard
1/4 tsp. salt
1/2 c. chopped bacon (fried or microwaved)

Clean spinach; dry by rolling in kitchen towels and refrigerate overnight. Mix remaining ingredients together for dressing except bacon. When ready to serve, put spinach in salad bowl. Add bacon and dressing and toss thoroughly. Serves 8.

This was the "Salad Dish" contest winner at the November 1991 Women's Club Meeting.

Since microwave ovens vary in power, you may need to adjust your cooking time.
