RHUBARB FRUIT COCKTAIL CAKE 
2 1/2 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 c. sugar
2 eggs
2 tbsp. oil
2 c. cut up rhubarb
1 lb. 13 oz. can fruit cocktail, drained
1 c. nuts, chopped

Pour hot water over rhubarb. Sift flour, baking powder, baking soda and sugar together. Add eggs, oil, fruit cocktail and the drained rhubarb. Use 9"x13" greased and floured pan and bake at 350 degrees for 40 to 50 minutes.
