ZUCCHINI BROWNIES 
2 c. zucchini, shredded and packed
1/2 c. oil
2 tsp. vanilla
1 1/4 c. sugar
2 c. flour
1 1/2 tsp. baking soda
1/4 c. cocoa
1 tsp. salt
1 egg

Sift all dry ingredients together. Combine zucchini, oil and vanilla and mix together. Add egg. Grease but do not flour a 9x13 cake pan. Pour batter into pan and bake 25-30 minutes at 350 degrees. Chopped nuts may be added if desired.
