1/4 c. olive oil 1 can (28 oz.) Progresso whole tomatoes, drained, seeded, diced 1 c. fresh basil leaves, coarsely chopped 1 to 2 lg. cloves garlic, finely minced or crushed 1/4 tsp. freshly ground pepper 1 lb. pasta, from rigatoni to vermicelli, cooked al dente Grated Parmesan cheese Saute garlic in oil. Add diced tomatoes, basil and pepper. Cook over medium heat about 5 minutes, stirring frequently, or until thoroughly heated. Pour over hot pasta and toss gently. Sprinkle generously with Parmesan cheese to serve. 8 side dish or 4 to 6 main dish servings. |
