ITALIAN WEDDING CREAM 
3 egg yolks
1/2 c. sugar
2 tbsp. cornstarch
2 c. milk
1 tsp. vanilla
1 tsp. lemon extract
Sponge cake
Rum

Place sponge cake in bottoms of custard cups. Sprinkle with rum. Mix egg yolks with sugar. Add vanilla, lemon and milk.

Mix cornstarch with a few tablespoons of milk and add to other ingredients.

Cook pudding, stirring constantly until it starts to boil and is smooth. Pour over sponge cake and cool.
