BENEDICTINE 
1 cucumber
11 oz. cream cheese, softened
3-4 scallions
2/3 dashes Tabasco sauce
2 tbsp. mayonnaise
Salt and pepper

Peel the cucumber, slice it lengthwise, and scrape out the seeds. Grate the flesh and place it in a dish towel. Squeeze out the excess moisture. Chop the scallions and mix with cucumber and remaining ingredients. Chill well before serving as a dip for crackers, raw vegetables, or pieces of pita bread. Makes 1 1/2 cups.
