KAY'S CASSEROLE 
1 can cream of chicken soup
1/2 c. mayonnaise
1/2 tsp. lemon juice
1/2 tsp. curry powder (or to taste)
2 c. cooked chicken (turkey, shrimp, etc.)
8 oz. frozen California vegetables
1/2 c. Parmesan cheese
1/4 c. melted butter
1 c. crushed cornflakes
1 tsp. parsley flakes

Thoroughly blend soup, mayonnaise, lemon juice and stir in meat and vegetables. Spread mixture in casserole. Sprinkle with grated cheese. Combine butter, cornflakes and parsley. Top with this mixture. Bake at 350 degrees for 45 minutes. Bamboo shoots are a nice addition. Serves 4.

Freezes well. Add cornflakes before baking.
