JEANNINE'S PEANUT BUTTER BALLS 
1 1/2 c. creamy peanut butter (18 oz. jar = 1 3/4 c.)
1/2 c. butter
1 tsp. vanilla
1 lb. confectioners sugar
1 (16 oz.) bag chocolate chips
2 tbsp. shortening

Mix peanut butter, butter, vanilla and confectioners sugar together thoroughly. Line a cookie sheet with waxed paper. Slightly butter hands and shape into small balls. Freeze while melting chips and shortening over medium heat, stirring constantly to prevent scorching. When melted remove from heat and let chocolate cool slightly. Dip balls in chocolate, coating thoroughly. Let harden on waxed paper.
