RHUBARB CRISP 
6 c. sliced rhubarb (1" pieces)
Grated rind & juice of 1 lemon
1/4 c. sugar
2 tbsp. flour
1/8 tsp. nutmeg
2 tbsp. butter, cut into tiny pieces

Set the oven to 400 degrees. Butter a 7 to 8 cup baking dish. In a bowl, toss together the rhubarb, lemon rind and juice, sugar, flour, nutmeg and butter. Put into baking dish.

TOPPING:

1 c. flour
1/4 c. butter, cut up
1/4 c. brown sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. quick cooking oatmeal

In a bowl using a pastry blender, combine the flour, butter, sugar, cinnamon, nutmeg and oatmeal. Spread this mixture onto the rhubarb and transfer the dish to the hot oven. Bake for 35-40 minutes or until the mixture is bubbling at the edges and top is golden brown.
