RIO GRANDE SUPPER 
1 lb. ground beef
1/2 c. onion
1/2 c. green pepper
1 can whole kernel corn, drained
8 oz. jar Cheese Whiz
3/4 c. bar-b-que sauce
1 tbsp. chili powder

Brown meat, onion, pepper, drain. Add corn, Cheese Whiz, bar-b-que sauce and chili powder. Simmer 20 minutes. Top with corn chips.

This Dish is GREAT for cooler evenings or large parties! It keeps well in a Crock-pot on low or warm setting for HOURS! Fritos are the chip of choice when serving this dish but any corn chip will do just fine. Picky eaters? Leave out the green pepper and use dried minced onions (they'll never know)!! If you double the recipe, be careful with the Chili Powder...DO NOT double it!! Start off with 1TBSP and THEN add small amounts as needed for taste! Too much Chili Powder Will have your guests running for the drink station with "cotton mouth"!!
