HEARTY TURKEY SOUP 
3 c. diced turkey
6 c. turkey or chicken broth
1 stick butter
4 tbsp. chopped onions
2 c. diced potatoes
1 c. diced carrots
1 c. chopped celery
Salt & pepper to taste
1 pkg. frozen French style green beans
1 tsp. oregano
2 tbsp. minced parsley or flakes
3 1/3 c. half and half light cream
4 tbsp. flour

Melt the butter in a large pan and cook onion until transparent. Stir in curry powder and cook a minute longer. Stir in potatoes, celery, carrots, broth and salt. Bring to a boil; lower heat and simmer 15 minutes. Stir in green beans, turkey, oregano and parsley. Cook 15 minutes, until vegetables are just tender. Combine cream and flour and stir in gently until blended. The soup should be slightly thick. Check seasonings. Serves 8 to 12 people.
