SLIM CHANCE TUNA 
1 tbsp. butter
1 c. sliced green onions
1 (8 oz.) can sliced bamboo shoots, drained
2 (4 oz.) cans sliced mushrooms, drained
1 (1 lb.) can Chinese vegetables, drained
2 1/2 c. cooked rice
1/3 c. water
1/4 tsp. instant chicken bouillon
2 tsp. cornstarch
1/4 tsp. garlic salt
1/4 tsp. celery salt
Dash of pepper
2 (6 1/2 oz.) cans water packed tuna, drained
1 med. tomato, cut in wedges
1 c. shredded raw spinach
Soy sauce, as desired

Melt butter, saute onions, bamboo shoots and mushrooms for 2 minutes. Add Chinese vegetables. Mix together water, bouillon, cornstarch, garlic salt, celery salt and pepper. Add to vegetables, simmer 3 minutes. Stir in tuna, tomato and spinach. Heat through. Serve over rice with soy sauce as desired. 289 calories per 1 cup over 1 cup rice.
