VEAL PARMIGIANA | |
1 lb. veal, round steak, or cubed steak 1/2 c. corn flake crumbs or crackers crumbs combined with 1/2 c. grated Parmesan cheese Salt and pepper to taste 1 each sm. onion and green pepper 4 oz. mushrooms 4 oz. Mozzarella cheese 1 egg, beaten Cut meat into 4 serving pieces; dip into beaten egg, then into corn flake and cheese mixture. Bake on slightly oiled baking dish at 400 degrees for about 30 minutes, turning once. Saute onion, green pepper, and mushrooms in small amount of oil; add 1 1/2 quart tomato sauce, 1 1/2 teaspoon Italian seasoning, and garlic to taste. Heat until boiling. Pour over the meat; reduce oven to 350 degrees until meat is done. Top meat with Mozzarella cheese; return to oven until cheese melts. Serve with cooked spaghetti. Makes 4 servings. Instead of using meat, you can use 4 deboned and skinned chicken breasts. |
