CALIFORNIA OMELET 
1/2 c. Cheddar cheese
6 eggs
Sm. onion
6 sliced mushrooms
Sm. ripe avocado
Sm. ripe tomato
Salt and pepper
Butter

Grate cheese; chop vegetables. Mix eggs with wire whip. Brown chopped onions until clear and limp in large skillet with 1 tablespoon butter. Add mushrooms, avocado, and tomato. Stir. Add beaten eggs. Cook until almost set; add grated cheese. Fold onto platter. Serve with taco sauce and sour cream. 2 servings.
