CHICKEN PEPPERONI 
1 lb. chicken breast, boned
1/2 c. cubed Mozzarella cheese
1/2 c. mushrooms
1/2 c. tomato sauce
1/4 lb. pepperoni, shredded

Cut chicken breast into small pieces. Bread chicken and saute in oil until medium brown. Place chicken into baking casserole. Pour over tomato sauce. Add shredded pieces of pepperoni. Add mushrooms. Top with Mozzarella cheese. Bake at 250 degrees until cheese is melted.
