MOM'S BANANA BREAD | |
4 overripe bananas, mashed 1 1/2 cups sugar 1 1/2 cups flour (not self-rising) 1/2 cup vegetable oil 2 eggs 1/4 cup milk 1 tsp. vanilla 1 tsp. baking soda 1/2 cup chopped pecans (optional) In a large bowl, mash bananas (a potato masher works great.) Add remaining ingredients, mixing as you go. Pour into one non-stick or lightly greased loaf pan. You may also use 4 mini-loaf pans. Bake at 350°F for 1 to 1 1/2 hours until top is firm and brown and a toothpick inserted in the middle comes out clean. Cool briefly in pan, then turn out onto a cooling rack. This freezes beautifully. For a real southern treat, serve a slice of bread with cream cheese and a slice of ham. Makes a great simple, but elegant breakfast. |
