FISH IN BUTTER 
4 med. thick slices of halibut
1 med. onion
1 bay leaf
2 potatoes, cooked in their jackets
1/2 c. butter
Juice of 2-3 lemons
Salt and pepper

Cook fish in salted water with onion and bay leaf. Peel potatoes, slice in rounds, and brown in a little oil or butter. When fish is done, place on hot platter and surround with the browned potato slices. Pour the melted butter mixed with lemon juice over all, and decorate plate with shredded lettuce, rings of lemon and slices of tomato. Serves 4.
