FLOUR TORTILLAS 
4 c. flour
1 1/2 tsp. salt
1/8 tsp. baking powder
3/4 c. shortening
1 c. + 1 tbsp. warm water (I use hot water)

In medium mixing bowl, hand mix the flour, salt and baking powder. Cut in shortening until it is completely mixed. Slowly add water while mixing. Mix until the dough can be gathered into a ball. (If needed, add more water or if too sticky, add a little more flour.) Knead dough until it is smooth and elastic. Let dough rest 15 minutes. Divide dough into 20 to 24 portions. Shape into balls.

On a lightly floured surface, roll each ball into a thin circle. Cook on ungreased skillet over medium heat. Cook lightly on first side. Turn completely, cook second side, then turn back to first side and finish cooking (turn a total of two times). Serve hot with butter if desired.
