PUMPKIN MUFFINS 
2 c. canned or cooked pumpkin
4 oz. bread made into crumbs
1 1/3 c. non fat dry milk
4 eggs
4 packets Equal sweetener
1 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. vanilla
Brown sugar replacement to equal 6 tsp.

Combine all dry ingredients. In a separate bowl mix pumpkin, eggs, vanilla. Add the dry ingredients and mix well. Line muffin tins or spray with non stick spray. Makes 12 muffins. Bake at 350 degrees for 30 minutes.
