APPLE BARS
2 1/2 c. all-purpose flour
1 tsp. salt
1 c. (2 sticks) butter
2 egg yolks, beaten
milk (add to egg yolks to make 2/3 c.)
1/2 c. bread crumbs
3 or 4 apples, peeled, cored and sliced
cinnamon
3/4 c. sugar
2 egg whites, beaten stiff
confectioners' sugar
1 tsp. hot water

Mix flour, salt and butter. Add egg mixture (yolks and milk) and blend. Divide dough into 2 parts. Roll out 1 part between wax paper. Cut dough to size of cookie sheet. Place on ungreased cookie sheet and top with bread crumbs. Lay apple slices on top, sprinkle with cinnamon and sugar. Roll out second half of dough and cover apples, then pinch shut to seal. Spread stiff egg whites over crust and bake at 350°F for 45 minutes or until brown. When cool drizzle with thin confectioners' icing (sugar and 1 tsp. hot water, mixed to drizzling consistency) over the top.
