CRANBERRY - NUT BREAD 
1 c. sugar
1 egg
1 heaping tsp. grated orange rind
2 tbsp. very hot water in a cup, with enough orange juice added to make 3/4 c.
2 c. bread flour
1/2 tsp. baking soda
2 tsp. baking powder
Dash of salt
1 1/2 to 2 c. cranberries, coarsely chopped
3/4 c. walnuts

1. Preheat oven to 350 degrees.

2. Beat together sugar, egg and orange rind in a small bowl.

3. In a large bowl, sift flour, baking soda, baking powder and salt. Make a well in the center.

4. Add egg mixture and orange juice.

5. Add cranberries and nuts. Bake in a greased and floured 9 x 5 x 3 inch pan for 1 hour.
