CRANBERRY FRUIT NUT BREAD 
4 c. sifted all-purpose flour
2 c. sugar
3 tsp. baking powder
2 tsp. salt
1 tsp. baking soda
1/2 c. shortening (unsalted butter)
1 1/2 c. orange juice
2 eggs, well beaten
4 c. fresh whole cranberries or 12 oz. bag whole cranberries
2 c. chopped walnuts

Sift together dry ingredients. Set aside 1/4 cup. Cut in shortening. Combine juice and eggs. Add to dry ingredients, mixing just to moisten. Sprinkle berries and nuts with reserved flour and add to batter. Turn into greased tube pan. Bake at 350 degrees for 90 minutes. Cool. Wrap and store overnight. Serve plain or with butter.
