CONFETTI SLAW WITH CUMIN
DRESSING
 
1 sm. head red cabbage, chopped (about 3 c.)
1 med. tomato, chopped
1/3 c. sliced pimento olives (salad olives)
1 sm. onion, chopped
1/4 c. crumbled feta cheese
1 tbsp. snipped cilantro

DRESSING:

1/4 c. vegetable oil
2 tbsp. tarragon or wine vinegar
3/4 tsp. salt
1/2 tsp. ground cumin
1 sm. clove garlic, crushed (optional)
Dash of ground pepper

Mix all salad ingredients together in a large salad bowl. Combine cumin dressing. Shake and toss with slaw when ready to serve.

Best slaw (taste and brilliant color). Looks best on first day but still tasty as days go by; colors fade and cabbage softens with time.
Savory! no irritating sweetness. Been making it for years but some LOVE it and some do not have a taste for it.
