MARTINIQUE SQUASH BAKE 
2 zucchini or yellow squash
1 tbsp. bread crumbs
1 onion, chopped
4 tbsp. Parmesan cheese
1 tbsp. butter
Salt & pepper to taste

Cut squash in half lengthwise and remove seeds. Use a spoon to gently scoop squash from the center. Coarsely chop scooped out squash and reserve. Gently saute onion in butter in a nonstick skillet. Add chopped squash, stirring just until heated through. Season to taste. Spoon onion mixture into squash halves. Combine Parmesan cheese and bread crumbs and sprinkle on top. Arrange in single layer on a nonstick baking sheet. Bake in preheated 350 degree oven for about 15 minutes, until cheese melts and squash is tender. Makes 4 servings.
