MANICOTTI 
4 eggs
1 c. all-purpose flour
1 c. water
1/8 tsp. salt
1/8 tsp. pepper

In a medium bowl, combine all ingredients; beat well with wire whisk. Fry in crepe pan or small frying pan (non-stick preferred). Place on waxed paper when done.

FILLING:

1 1/2 lbs. ricotta cheese
1/2 lb. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese
2 eggs
1/8 tsp. salt
1/8 tsp. pepper
1 tbsp. parsley, chopped

In a medium bowl, combine all ingredients; mix well. Put 2 heaping tablespoons of filling in each manicotti and roll. Use a 13 x 9 x 2 inch baking dish and your favorite tomato sauce recipe. Bake at 350 degrees for 1/2 hour or until bubbly. Makes 12 to 15 manicotti.
