MEXICAN CASSEROLE 
1 1/2 lbs. ground beef
1 pkg. taco seasoning
10 corn tortillas
1 can Ro-Tel tomatoes, diced
1 can pinto beans, drained
1 can cream of mushroom soup
8 oz. Monterey Jack cheese, grated
8 oz. cheddar cheese, grated

Brown meat, add seasoning and 1 cup water. Simmer 5 minutes. Spray 9"x13" pan with Pam. Layer 5 tortillas (cut in fourths). Layer meat mixture and beans. Sprinkle 4 ounces Jack cheese and 4 ounces cheddar cheese. Layer remaining tortillas. Spoon soup on tortillas and spread. Layer tomatoes and remaining cheese. Bake at 350 degrees for 30 minutes. Serves 8.
