WHOLE WHEAT, CHIP AND COFFEE
BARS
 
2 c. all-purpose flour
1 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
2 eggs
2 c. packed brown sugar
1 c. cooking oil
2 tsp. vanilla
2 tsp. instant coffee crystals
1 c. cold water
1 c. semi-sweet chocolate pieces
1 c. chopped walnuts

Stir together flours, soda, and salt. In large mixer bowl, beat eggs until light and fluffy. Gradually add brown sugar, oil and vanilla; beat well. Dissolve coffee crystals in cold water, gradually stir into egg mixture. Add dry ingredients, beat until well combined. Pour batter into a greased 10x15x1 inch baking pan. Sprinkle chocolate pieces and nuts evenly on top. Bake in 350 degree oven for 25-30 minutes. Cool slightly.

Drizzle with coffee glaze.

COFFEE GLAZE:

Dissolve 1/2 teaspoon instant coffee crystals in 4 teaspoon water. Combine 1 cup sifted powdered sugar, 1 tablespoon softened butter, and the coffee mixture until smooth. Cut into squares. Makes 36 bars.
