SPICY APPLE CAKE 
4 med. tart apples
1/4 c. sugar
1 tbsp. cinnamon
3 c. flour
2 c. sugar
1 tbsp. baking powder
1/4 tsp. salt
1 c. vegetable oil
4 eggs
1/4 c. milk
1 tbsp. vanilla

Peel, core, and slice apples in small bowl, combine sliced apples, 1/4 cup sugar and cinnamon. Stir to coat apples and set aside. Preheat oven to 325 degrees. In large mixer bowl, combine flour, 2 cups sugar, baking powder and salt. Add vegetable oil, eggs, milk and vanilla. Beat for 7 to 10 minutes. Pour 1/2 batter into 10 inch tube pan. Arrange 1/2 apple mixture on top. Repeat layers and bake at 325 degrees for 1 hour and 45 minutes. Cool and remove from pan.
