APRICOT-PINEAPPLE SUPERB GELATIN
SALAD
 
2 sm. pkgs. orange Jello (I use sugar free)
2 c. boiling water
2 c. crushed pineapple with juice
1 lg. (#2 1/2) can of peeled apricots
1 c. miniature marshmallows

Dissolve Jello in boiling water. Drain and mash apricots, reserving syrup. Add pineapple, apricots, and marshmallows. to hot Jello mixture. Stir to partially dissolve marshmallows. Pour into large flat dish.

TOPPING:

1 c. reserved apricot juice
1/2 c. sugar
2 tbsp. flour
2 tbsp. butter
1 egg, beaten

Cook above ingredients until thickened. Cool thoroughly.

Add:

1 c. whipped cream (Cool Whip is good)

Spread this over Jello mixture.

Top:

Grated yellow cheese sprinkled over all
