BAKED BEANS WITH FLANKEN 
2 lbs. jumbo marrow beans
1 tsp. dry mustard
3/4 c. maple syrup
1 lb. flanken, cut in pieces

Soak beans overnight in water. In morning, add a whole onion and cover with additional water and boil 1 hour. Discard onion. Grease bean pot well. With slotted spoon, put a layer of beans, some flanken, sprinkle with mustard. Continue making layers. Pour syrup over all. Bake at 325 degrees for 4-5 hours. Cover (pot should have air hole), baste occasionally with water or syrup depending on your taste. Remove cover last 1/2 hour. May be frozen. Enjoy.
