ESCALLOPED TURKEY 
1 (1 lb., 12 oz.) canned turkey
1/2 c. mayonnaise
1 sm. onion, cut fine
1 green pepper, cut fine
1/2 c. celery, cut fine
8 slices bread
4 eggs
3 c. milk
1 can mushroom soup
Sharp grated cheese

Place 4 slices bread into 1 quart baking dish. Mix first 5 ingredients together. Put turkey mix over bread. Place the last 4 slices bread over this. Pour egg and milk mix over this and leave in refrigerator overnight. Bake at 325 degrees for 30 minutes. Remove from oven and spread undiluted mushroom soup and grated cheese on top. Bake at 325 degrees for 1 1/4 hours.
