RED BEANS & RICE WITH SMOKED
SAUSAGE
 
2 tbsp. vegetable oil
1 med. onion, chopped
1 can green chilies, chopped & drained
3/4 c. uncooked rice
1 c. water
1 beef bouillon cube
1 (16 oz.) can red beans
1/2 c. shredded Monterey Jack cheese
1 lb. smoked sausage
1 tsp. Tabasco

In medium saucepan, heat oil over medium high heat; add onion and chilies an saute 3 minutes. Add rice, water and bouillon cube. Bring to a boil. Reduce heat, simmer, covered, 10 minutes until rice is tender. Stir in beans, cheese, smoked sausage and Tabasco. Serve warm. Serves 4.
