PIZZA AU NATUREL 
CRUST:

1 c. whole wheat flour
1 c. white unbleached flour
1/2 tbsp. active dry yeast
1/2 tsp. honey
1/2 - 3/4 c. warm water (right in middle)
1 tbsp. oil
1/2 tsp. salt

In mixing bowl dissolve yeast and honey in warm water. Let soak about 10 minutes. Add salt and oil, then add flour gradually. Mix well. When dough is dry enough to handle remove from bowl and let sit a few minutes. Knead for 10 minutes or so, adding flour if needed. Let sit again for a while.

Lightly brush pizza pan with oil and stretch dough into place.

SAUCE:

Either prepared pizza sauce or 1 small can tomatoes seasoned with onions, garlic, basil, oregano, salt and pepper. Top with fried tofu, grated carrots, onions, black olives and Mozzarella cheese.

Cook at 400 degrees for 20 to 25 minutes.
