FATTIGMAND BAKKELSER (A
NORWEGIAN FRIED COOKIE)
 
10 egg yolks
1/3 c. powdered sugar
1/2 c. whipping cream
1 tbsp. brandy
1 tsp. cardamon
1/2 tsp. grated lemon peel
2 to 2 1/2 c. flour
Oil for deep frying

In a large bowl, beat the egg yolks and sugar until thick and lemon colored, about 10 minutes. Stir in remaining ingredients, mixing in enough flour to make a stiff dough. Cover and chill for 3 or more hours. Roll out on floured board and cut into diamonds. make a vertical slit in each cookie and fold the points through slit. Fry at 375 degrees for 15 seconds. Drain on absorbent paper. Store in an airtight container. Sprinkle with powdered sugar before serving. Makes 3 to 4 dozen.
