MEATLOAF MUFFINS 
1 egg
1/2 c. milk
3/4 c. soft bread crumbs
Onions; optional
1 1/2 tsp. salt
1/2 tsp. pepper
1 lb. ground beef

Mix all the ingredients in a large bowl. Press mixture into muffin tins to almost the top.

Preheat oven to 350 degrees. Bake 30-35 minutes. Pour mushroom gravy over each muffin.

fun, easy recipe. Made a few changes: instead of salt used about 4 tbsp. garlic salt with parsley, about 1/2 tbsp. garlic power, about 1 tsp basil, about 3 tbsp. ketchup & about 1 1/2 tbsp. mustard. (measurements aren't exact, I just added but they're close). Also in 6 of the 12 muffins I mixed shredded Colby Jack cheese. For the topping I used 1/3 c ketchup, 1 tbsp. mustard and about 3 tbsp. brown sugar. Also put a little of the cheese on top of the ones filled with cheese. Went over great w/ the family.
