TROPICAL RAISIN MUFFINS 
2 1/2 c. unprocessed bran
1 1/3 c. whole wheat flour
2 1/2 tsp. baking soda
1 1/2 c. raisins
1 c. shredded coconut
2 eggs, beaten
1/2 c. buttermilk
1/2 c. vegetable oil
1 c. mashed banana
1/2 c. honey

In a large bowl combine first 5 ingredients; mix to blend thoroughly.

In another bowl beat eggs and add buttermilk; vegetable oil, banana and honey. Beat to blend thoroughly. Add dry ingredients and mix just until blended. Grease or paper muffin tins. Will make 18 (2 3/4 inch) muffins. They will seem quite full.

Bake at 375 degrees for 20 to 25 minutes until spongy to touch and lightly browned.
