GRILLADES AND RICE 
1 lb. round steak
1 lg. onion
4 tbsp. shortening or oil
3 tbsp. flour
2 c. water
1/4 tsp. thyme
1 tbsp. parsley
Salt and pepper to taste
1/2 sm. can tomato sauce
Cooked rice

Cut steak in small pieces and fry until brown; set aside. In same skillet fry onion and flour until slightly brown. Add tomato sauce, water and other ingredients.

Lower heat and add meat; cover and simmer for 45 minutes. Serve with enough rice for 4 people. Grillades is a favorite and traditional brunch dish in New Orleans.
