GERMAN - STYLE RED CABBAGE | |
1 sm. onion, chopped 1 sm. red cabbage 2 tbsp. sugar 1 tsp. salt 1 bay leaf 1/4 c. water 2 tbsp. red wine vinegar 1 apple, peeled & chopped 3 slices bacon, cooked & crumbled Cut cabbage into 6 wedges, removing core. Place in large saucepan. Add onion, sugar, salt, bay leaf, water, and boil. Cover, reduce heat, simmer 20 minutes. Add vinegar and apple; cover and cook an additional 3 to 4 minutes. Remove cabbage to serving platter with slotted spoon. Strain pan liquid, reserving onion and apple; discard bay leaf. Spoon apple and onion over cabbage; sprinkle with crumbled bacon. Yield: about 6 servings. |
