CLAREMONT DINER CHEESECAKE 
32 oz. cream cheese
6 eggs
1 tbsp. vanilla
2 tbsp. cornstarch
2 c. sugar
1 pt. sour cream

Preheat oven to 350 degrees. Grease and flour springform pan. Beat eggs well in a large bowl; add in vanilla and cornstarch; continue beating. Mix in sugar. Soften cream cheese to room temperature and beat in separate bowl. Add to egg mixture and beat well. Fold in sour cream. Pour into prepared spring pan. Bake 1 hour and 10 minutes. When done, turn off heat and open door; let sit in oven for 10 more minutes. If desired, top with favorite pie filling topping.
