BREAKFAST CASSEROLE | |
5 or 6 apples (about 2 lbs.) 1 tbsp. lemon juice 1/4 c. butter 2 1/2 c. corn flakes 1/2 c. brown sugar 1 tsp. ground cinnamon 1/2 c. apple juice, heated Pare and slice apples; put in bowl and drizzle with lemon juice. Toss to coat. Melt butter in skillet; add corn flakes and coat with butter. Divide the corn flakes into 3 portions. Spoon 1 portion of flakes into 1 1/2 quart casserole. Spoon in 1/2 of apple mixture. Mix brown sugar and cinnamon and sprinkle half over apples. Repeat layers; end with corn flakes. Pour hot apple juice over all and cover casserole. Bake at 350 degrees for 10 minutes. Remove cover and continue to bake for 40 minutes. more. Yield 6-8 servings. This recipe could be used for a dessert. Tastes like apple pie. |
